Yesterday was ridiculously cold so I decided to warm the family up by making a mixed fruit cobbler.
serves 6-8
For the fruit mixture you will need…
1 punnet of strawberries, tops removed and halved
2 punnets of blueberries
2 punnets of raspberries
1 punnet of boysenberries
2 pears, peeled, cored and cut into medium chunks
3 granny smith apples, same as above
2 tblsp balsamic vinegar
3 tblsp white sugar
Pre-heat oven to 190dC.
In a large pot, firstly heat the pears and apples over medium heat. Once softened, add the rest of the fruit along with the sugar and balsamic vinegar. Heat until the all the fruit is bubbling around the edges of the pot. Once simmering, remove from heat and pour the fruit mixture into a medium sized serving dish and set aside.
Onto the ‘cobbler’ part…
110 gr unsalted butter
225 gr self-raising flour
70 gr white sugar
140 ml butter milk
In a bowl, using your hands combine the butter and flour until it begins to look like a crumble mixture. Add a pinch of salt, the sugar and butter milk and lightly knead till all ingredients are well combined. To create the ‘cobble’, roll 6-8 dough balls and place them on top of the fruit mixture. Don’t worry about gaps in-between the dough balls as they will rise and spread once in the oven.
Place the cobbler in the oven for about 30-40 minutes until golden brown and bubbling! (You can sprinkle a little bit of brown sugar on top to create a nice sweet crunch 5 minutes before taking the cobbler out)
Serve with cream and it will instantly warm you up on a cold winters night =]
