the Sunday Morning Crepes

I hate being lazy on a sunday morning, it is just not me, I rather feed the whole family, however I cannot be bothered being too much time in the kitchen, it still is rest day!

Found the trick: crepes. Easy to do, convivial and puts everyone in a great mood.

Recipe for very thin but moist FRENCH CREPES

(I insist on them being THIN, they are not pancakes but crepes… please!)

125 gr of flour
125 gr of corn flour (Maizena)
1 tbs of baking powder
50 cl of milk
50 gr of sugar
4 eggs
40 gr of melted butter + extra butter for the pan

Mix everything for a couple of minutes and make sure there is no lumps!
Put butter in the pan.

Then fill in half a laddle and pour in into the pan, you want it to be as thin as possible so if after covering the whole pan there is still so extra batter on top, put it back in the jar.The real trick is to find the perfect heat for the pan, enough for the crepe to be nice and golden after a few seconds.
Wait a few seconds untils the borders start to golden and flip it over!

Let it a bit more time until it s all covered with golden spots and the crepe is ready!
